Super Hero Soup
(Tomato Florentine Soup)

3 cups V-8
2 cups chicken broth
2 cans petite chopped tomatoes
3 cups baby spinach
1 tsp. chopped garlic
Fresh cracked pepper
Tabasco sauce to taste
Parmesan cheese

In a large pot, bring the first 3 ingredients to a boil. When hot, add the spinach, pepper and Tabasco and adjust seasonings to taste. Stir to mix and pour into individual serving bowls. Sprinkle with Parmesan cheese.

Add one or more of these additions for variety:

Sauté one or more of the following:

Chopped onion
Chopped celery
Chopped carrots
Mushrooms
Kale, collard greens or turnip greens
Green beans
Corn, beans, peas, or chopped potato
Frozen mixed vegetables or whatever leftover vegetables you have on hand
Brown rice, quinoa, amaranth, barley or other grains
Macaroni, spaghetti or other pasta
Chopped chicken
Ground beef (brown and pour off the fat before adding remaining ingredients)
Sprinkle with shredded cheddar cheese rather than parmesan cheese

If adding raw ingredients, cook until done. To freeze, add ice cubes and stir until cooled. Pour into freezer bags or containers and freeze immediately. Use within 3 months.
